Healthy Chicken Taco Soup Recipe

When I was at the grocery store yesterday, shopping for the ingredients for my family’s FAVORITE winter-time soup, I literally stood in front of the tomato section, paused for a minute, and wanted to shed a little tear! I MISS my HOME-GROWN tomatoes SO terribly!!! It’s such a shame to have to buy these plastic-y looking things that claim to be tomatoes, but are nothing short of imposters in my opinion! {Hmph!} Luckily, the divine taste of the Chicken Taco Soup was still a big hit last night and we STILL got a LOT of healthy veggies in our bods!

People are always asking me for ideas on what to feed their family for dinner… although my favorite question of all… is if I feed them NORMAL things for dinner! {ha ha ha!} I love it! Yes! We definitely eat NORMAL things around here! {Mind you, I have a 9 year old son and a 7 year old daughter… but most importantly, I HATE to cook!} So I’m NOT one that is willing to spend hours in the kitchen making crazy dishes that are ultra-elite, just to make sure they are healthy! You can do that with PLENTY of “normal” recipes!

 

This Chicken Taco Soup recipe is one of my FAVES for many reasons!

 

1. It’s literally chopping and throwing things into a crockpot! No cooking required! YAY for the “I-hate-to-cook” types of people like me huh? :) Yee-haw!

 

2. The veggies that go into the soup are chopped up really small, so the kids have NO idea they are downing something healthy for them! {Just wait… it gets even better!}

 

3. Since you top the soup with tortilla chips, the kids actually feel like they are getting away with some serious “health-code” violations… and that you are okay with it! {Which you are… because they are getting green peppers, onions, and celery in their soup… which they may or may not be aware of! {wink, wink!}

 

4. And finally, it’s one of my faves because this recipe makes TONS! And that means leftovers for the next night which means MOM is off cooking duty again! Whoo-whoo!

 

CHICKEN TACO SOUP

 

1/2 cup chopped green pepper

1/2 cup chopped onion

1/2 cup chopped celery

Put the above ingredients in a crock-pot and then add:

2 cans cream of chicken soup (98% fat free)

2 cans chicken broth

3 – 4 uncooked chicken breasts

1/2 cup salsa

Cook for 5 hours on low in crock-pot. Take chicken out and shred. Put the chicken back in and warm it up just a little longer.

On top of soup, add the following garnishments:

- tortilla chips (watch portion sizes)

- tomatoes

- avocados (this is a healthy fat, but is STILL a fat… so moderation is key!)

- low fat sour cream

- low fat grated cheddar cheese

 

Mmmmmm… It is SO good! I have never served this to anybody who did NOT like it! And as long as you watch your portion sizes, this is a GREAT item to serve you and your family at dinner time! Hope you enjoy!

What would you say is a portion size? One cup? Do you measure or just eyeball it?

Also…I am VERY curious what your kids drink. Given your aversion to soda and sugar. Do they drink water or milk all the time or is there something else you are ok with them having? My kids are NOT happy about our recent change to healthier eating and my insisting they have more water. They would rather go without anything than have to have water! Help!

Shawna – I usually just eyeball it, but yeah… I would say about 3/4 of a cup to a cup is a good portion size. Now… about my kids and what they drink. Since I have never been a pop drinker, they have just never been used to having pop around the house. They DO get it at their Grandma Rosenbaum’s house though! :) So they are not entirely deprived of it! {wink!} Anyway, I serve them water with every single meal and that’s just what they are used to. My son isn’t a big milk drinker by choice, although my daughter loves to have milk with her snacks. I don’t serve juice much because of the sugar content, although occasionally, we’ll have pure 100% orange juice and apple juice around for breakfasts and lunch. But for dinner, it’s always just water. My suggestion is to just keep at it. Everybody gets USED to eating the foods they eat, and eventually if you serve water long enough, they’ll get thirsty and drink it. You could dress it up for them by putting it in a glass container and slicing up some lemons and limes and putting them inside. You could also go get some fun straws for them so the focus is on the straws for now, instead of the water. {Just some ideas for ya!} This is SUCH an important thing for your kids health… that you’ve GOT to be strong here and NOT let them bull-doze you into letting them have their way! You can do it! :) And one day, they’ll thank you for it!

Thanks for the suggestions Liz! I think I might pick up some of those crazy straws…they will love them. Don’t know why I didn’t think of that. Duh. I know it will eventually pay off…just REALLY hard in the meantime with so much resistance. But hey, if I don’t buy the stuff what can they do? Haha.

I made this last night.. and WOW!!! I was truly amazed that my kids ate it…. they aren’t very fond of peppers and onions, but they couldn’t even tell they were in there… YUM!!! Great recipe!

do you know how many calories are in this soup??? It sounds so good!

Brandi, I have attempted to figure out how many calories are in this soup by inputting all of the ingredients on fitday.com, but when I did it, I didn’t know exactly how many servings the soup made. So, I need to make this recipe again and count out exactly how many cups it makes so I can determine exactly how many servings it will provide. :) That way, I will have a more accurate number to go on instead of the guess I was basing it on.
