Pumpkin Puff Cookies
This time of year is the PERFECT time of year for a yummy little pumpkin treat! And this recipe is just that. It’s a treat… it’s full of pumpkin… and it’s little! One of my clients gave me this recipe because I kept seeing “pumpkin cookies” on her food journal. When I asked her about it, she told me it was a recipe from Weight Watchers and that each cookie is only 1 point each (or approximately 50 calories each.)

So I figured I better whip up a batch and try them out myself! My conclusion? Mmmmm! Delightful! The only hard part is limiting yourself to just one or two!
ha ha! The good news is, PUMPKIN is extremely healthy for you… so when you are eating these cute little cookies, you can feel good, knowing that you are giving your body some great vitamins and nutrients, as well as a yummy treat!
Pumpkin Puff Cookies
1 spice cake mix
1 15 oz can pumpkin
1 cup chocolate chips
Mix all ingredients together and drop by teaspoonfuls onto un-greased cookie sheet. Bake at 350 for 15 minutes. Ta-Da! That’s it… your baking is done and you can indulge in a semi-healthy, super-yummy, extremely festive fall treat!

I LOVE these cookies! Last weekend I made a different version. I used banana cake mix, a can of butternut squash puree and peanut butter chips. I call ‘em Elvis puffs!

Oh I love these! But no, I can’t limit myself to one or two so I rarely make them. BUT I do mix pumpkin into a bowl of oats along with cinnamon, stevia, 15 chocolate chips and some peanut butter! YUM!
