Tuna Tomato Casserole

Here’s a little twist on a classic recipe that my family has been eating for years. I don’t know why I didn’t think of it sooner, but when our tomato plants seemed to act like they had been on steroids all summer, I was suddenly adding tomatoes to EVERYTHING! Tuna casserole included! After tasting it with the delightful flavor of tomatoes mixed with the other ingredients?? Um, I will NEVER go back to making it the old fashioned way!

I wanted to share my recipe with you because it is SO simple and easy to make… and my kids absolutely LOVE it! My six year old daughter however, is not a fan of tomatoes… so that’s why I left 1/4 of the casserole free of the red stuff! If you ask me, it just looks sad and naked without it!

Tuna Tomato Casserole

Before doing anything, you need to steam your rice. ALWAYS use brown rice! Never use the white rice… it is void of fiber and all the good healthful stuff! I use the good old fashioned rice that takes about 45 minutes to cook just because I’ve never compared it to the instant brown rice. I honestly don’t know how they compares to each other as far as the health benefits go, just because I’ve never taken the time to look into it. {I guess I need to just for my own sake!}

- 2 to 3 cups cooked brown rice

- 1 can low fat cream of chicken soup

- 1 1/2 cups skim milk

- 2 cups frozen peas

- 2 cans tuna fish (in water) drained

Mix soup, milk and peas in a medium saucepan and bring to a small boil, stirring occasionally. Add rice and tuna. Mix lightly. Put into 9×13 casserole dish.

Top casserole with:

- 4 to 5 chopped tomatoes

- 3/4 cup colby jack cheese

Bake at 375 degrees for 25 minutes or until cheese is lightly browned. This is what the finished product should look like!

This is one of those meals that is GREAT to have for leftovers! My kids will snarf it up for lunch the next day and won’t even complain about it! And it’s great because you are getting your lean protein, your fiber, your veggies, your healthy carbs… ALL in ONE meal! Can’t get better than that, now can you?
