Whole-Wheat Waffles

My family absolutely LOVES homemade whole-wheat waffles for breakfast… and after trying several recipes, this is by far our favorite of all of them! It’s a pretty quick and easy one to whip together and my trick is to double a batch on Saturday mornings… and freeze the extras so throughout the week, we can just pop them in the toaster for a super heathy, super yummy breakfast!

My husband found the original recipe on the internet, but we adjusted some of the ingredients and actually took out a few items it called for… {scary!} but they still taste delicious! So I call this recipe “Matt’s Sunday Waffles” in honor of him… because he used to always make them for the kids each Sunday morning when we had church at 1:00 in the afternoon. This year, our church schedule changed to 9:00 am, and we are usually frantically rushing to get to church on time! {So it’s cold cereal and apple slices for them now!} ha ha! Just kidding, it’s really not that bad!

Anyway, here’s the recipe! It’s so good… you’ve definitely got to give it a try!


Whole-Wheat Waffles

- 2 cups whole wheat flour

- 1 teaspoon salt

- 1/4 teaspoon cinnamon

- 4 teaspoons baking powder

- 2 tablespoons sugar

- 2 eggs

- 2 cups fat free milk

- 1/2 cups olive oil

Blend all ingredients in a bowl and pour into waffle iron. Ta-da! It’s THAT simple!!! My favorite thing about them is that the outside of the waffle has a light and crispy “flakiness” to them that is “ooooh” so yummy! I am content to have my waffles with just plain old butter {just a smidgin’ of course}… or else top it with a bit of light yogurt and fresh strawberries on top. Unfortunately, my kids go for the maple syrup over any other topping, but I figure that at least their waffle is healthy, so at least half of it is healthy right?! :)

I entered in all of the ingredients on NutritionData.com {very cool site, by the way!} and each waffle has approximately 70 calories in them! That’s a pretty great way to start your day… so if you enjoy waffles, make you some of these and see how you like them!
