Daily Menu Plan: Day 3
Here is day 3 of my daily menu ideas. I’ll probably end at this so I don’t bore you with what we eat at my house, but for those who were interested in having these menu plans, I sure hope it helped!
Breakfast:
Spinach shake and 1 slice of whole-wheat bread
{I was craving a spinach shake this particular morning, so this is what I had for breakfast. However, I served the kids strawberry yogurt with granola on top, a slice of whole-wheat toast with butter, and of course I shared my spinach shake with them. They LOVE spinach shakes… and what a great way for kids to start their day? Two servings of veggies and two servings of fruit? All in one glass? I don’t think it can’t get better than that!}
Lunch:
{This whole-grain tortilla, with hummus and veggies is such a yummy and light meal! I didn’t use turkey or cheese this time around and it was still a fabulous – and clean – tasting meal!}
Basic Hummus Recipe:
In a food processor, combine the following ingredients and mix until it becomes a smooth consistency.
3 tablespoons olive oil
1 tablespoon lemon juice
1 garlic clove, minced
¼ cup tahini {this is sesame seed paste and can be found in most grocery stores}
1 can garbanzo beans {also known as chickpeas}
1 teaspoon cumin
1 teaspoon kosher salt
I used the hummus recipe above for this meal because it literally takes minutes to make! Here is another recipe for hummus though, which has a little more spice and zest to it.
Snack:
Isagenix Chocolate Protein Shake
{I love having protein shakes when I’m hungry and need something quick! After school yesterday, I had a group of church girls coming over to my house to be taught how to wash dogs for our up-coming service project… so I had NO time to spend on making food. Isagenix shakes are my new favorite protein shakes because they are PACKED with vitamins, minerals, FIBER, not to mention healthy carbs and fats. Most other protein powders are just that… plain old protein! Nothing else! In order to make those types of protein shakes “complete” and have a high nutritional value, you need to add things to it such as fruit or peanut butter. Not Isagenix shakes… they have a list a mile long of nutrients which are included… so I feel good knowing that I’m getting an extremely high quality, very nutritious shake, that literally took me 2 minutes to throw together!}
Dinner:
Honey grilled salmon with a side of brown rice, steamed broccoli and raw sugar snap peas
This salmon recipe is one of my favorites! In fact, I love it so much that I want to go to Alaska with my hubby someday so he can go salmon fishing and bring home a bunch! My kids love it also… even my picky six year old, so that’s a sign that this one’s a keeper!
Salmon Recipe:
{This tastes the best when you use fresh salmon, but if that’s not possible, frozen is still a good option.}
1. Season the salmon with kosher salt and place on grill. (I use a George Foreman).
2. Heat 1/4 cup raw honey in microwave and drizzle over one side of the salmon.
3. Sprinkle with dill weed.
4. Flip salmon over after about three minutes of grilling and repeat on other side. (Make sure the skin is off.)
5. Grill for another 3 minutes or until cooked all the way through.
One of the best things to me about eating clean foods, is that it really is a YUMMY, GOOD TASTING way of eating! Many people have the myth stuck in their head, that eating healthy is going to taste boring, be flavorless or make you feel hungry all the time. Well, CLEAN eating is anything BUT those things! Believe me… I can’t stand to be hungry! I get downright grouchy and mean if I’m too hungry… {just ask my hubby and kids!} Sometimes it just takes some new ideas on what to make or how to eat in order to make lasting, healthy changes to your diet. Hopefully, the last three days of menu plans gave you some help and encouragement as you try to live a HEALTHY, HAPPY life! Let me know!

mmm…all of this sounds so delicious and healthy, thank you! it will help me, i’m trying to get back on track with my nutrition. wanted to tell you that i made my goal…finished the Women of Steel triathlon on Saturday, check out my post. thx for cheering for me when i told you i was going to do it! take care, miss you, Liz!!
