Tuna Avocado Spread

Recently, I’ve been trying to rotate through our food storage, and I realized I had an entire case of tuna fish that needed to be eaten up soon before it went bad and was a complete waste! The only problem was, all I really ever make with tuna, is tuna casserole and regular old tuna sandwiches with dill pickles.

 

Well… I knew there was no way I’d be able to get my kids to eat the same old thing, day in and day out while we used up our case of tuna fish, so i knew it was time to get creative! I looked up a variety of recipes online, and much of what I saw didn’t look healthy, or it looked way too complicated to make. 

 

The good news is, I ended up taking a few ideas from a recipe I found, added my own little twist to it, and was able to come up with the most delicious tuna fish sandwich spread I have ever tasted! The best part? It is super quick and easy to make and it is LOADED with nutrients!

 

Ingredients:

1 avocado

1 tablespoon lemon juice

2 tsp olive oil

2 cans tuna fish (6 oz size)

2 tablespoons raw sunflower seeds

1 teaspoon kosher salt

pepper to taste

 

Directions:

1. Cut avocado and remove pit. Scoop out avocado flesh from both sides and place in small mixing bowl.

2. Add the lemon juice and olive oil and mash until smooth.

3. Add tuna fish, sunflower seeds and salt and mix together to desired consistency. 

 

My original plan was to serve it on whole wheat pita pockets with veggies, but when I got home from the grocery store that day and opened the pack of pita’s, every single one of them was moldy! {Disgusting!} Plan B, was to serve it up on my homemade whole-wheat bread… and it was still absolutely wonderful! 

 

I lightly toasted each slice of bread, then spread about 1/4 cup of tuna fish mixture on top, and layered veggies on top of that! Mmmm! My kids and hubby loved it! We ate this for dinner the other night, along with a serving of fat-free cottage cheese and several slices of red peppers. It was so fast to make, it didn’t heat up the kitchen and it was very filling!

 

I analyzed the recipe on NutritionData.com and I was so excited to see that it only had 239 calories per serving and 23 grams of lean protein! How great is that??

Mmmm… that sounds really yummy. I actually experimented with some tuna yesterday. Along with some lite mayo, I added celery seed, fresh chives, a dash of paprika, and lots of grated carrot. I would have used fresh celery, but I didn’t have any. I served it on whole wheat bread on a bed of fresh spinach leaves. Yum!

Thanks for this recipe! I made my version with tuna, avocado, chopped pistachios, diced red onion & placed the spread on whole grain english muffins! I topped them with red peppers, cucumber, and feta.
i was able to use ingredients i already had in my kitchen and the end result was very tasty :)
