Whole Wheat Sugar Free Pancakes
This is my ALL TIME favorite pancake recipe for several reasons:
1. It’s simple to make and only has five ingredients in it.
2. It’s super healthy and contains no sugar.
3. It makes for a yummy breakfast… even with nothing but a bit of butter on top.
Whole-Wheat, Sugar Free Pancakes
1 1/4 cup whole wheat flour
2 1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 1/4 cup fat free milk
Combine ingredients in a medium sized bowl and mix together. Heat skillet to medium heat and spray with olive oil cooking spray. Pour onto skillet and flip pancake over when batter starts to bubble.
One of my pet peeves, when it comes to healthy pancakes and waffles, is when they are drenched with sugar laden syrups and suddenly made unhealthy! There are plenty of things you can top them with that are healthy and still really yummy.
Here are some healthy topping ideas that we use on our pancakes… if you have some favorites that I haven’t mentioned below, I’d LOVE to hear your ideas!
- Natural peanut butter drizzled with a bit of raw honey
- Almond butter topped with banana slices
- Low-fat yogurt with slightly thawed strawberries, mashed together
And here’s a tip that might help you on those crazy weekday mornings, when you feel like there is no time to whip up something warm and wholesome for breakfast. Each time you make pancakes, double the recipe and freeze the extra ones… That way, you can simply pop one in the toaster and have a nutritious breakfast, when normally you wouldn’t have time.

Just made these tonight, and they get 2 thumbs up from everyone in my family! I added some cinnamon, but otherwise stayed true to the recipe. My husband really liked the texture. Thanks for posting this, Liz! I think that I’ve finally found my go-to whole wheat pancake recipe!
