Protein Ice Cream

I will try anything to come up with a way to satisfy my sweet tooth and still stick to a healthy diet. Just ask my husband… he often finds me in the kitchen trying to create a new concoction or mixture of foods that will taste sweet and sinful – yet won’t have strings of guilt attached.


 

Most of the time, he just chuckles and rolls his eyes at my crazy attempts… but things were different today! Today, he was a bit more curious as to what I was throwing into my blender. Today, he said it actually looked good and he wanted a taste. Today however, I decided that I didn’t want to share, and I kept my concoction all to myself! Wanna know what it is? I’ll tell you!

Wow. This stuff is good. I’m talking, SO good that you can’t even tell that it’s healthy for you good! It’s actually just a protein shake that is frozen – just a bit – to resemble ice cream. I’ve seen Chocolate Mint protein powder for sale in health food stores for as long as I can remember. But since a container of protein powder is anywhere between $50 and $60, I only buy the plain chocolate and plain vanilla flavors. I can’t imagine spending hundreds of dollars just to get a few different flavors of protein powder. In my opinion, chocolate and vanilla are the most versatile flavors, so I’ve always just stuck with them. 

 

Well, the other night I really wanted to eat something sweet. But reaching for my kids Halloween bucket was out of the question because I would have totally ruined my “End of Year Goals.” So, I had to come up with another option. I was getting bored of the same old protein shakes that I usually make, so it was time to get creative. 

 

Here’s what I did. (Actually, what I did the first time didn’t taste so great, so I tried again and finally tasted success!) 

 

In a blender, mix 2 cups of skim milk with 2 scoops of chocolate protein powder.

Then, you’ll want to take a 1/4 teaspoon, and ONLY fill it about half way with Peppermint Extract.

*Trust me when I say that you don’t want more than 1/2 of a 1/4 teaspoon. I originally added 1/4 a teaspoon of peppermint extract and it was so minty, I felt like my mouth had been bleached with a glass of Clorox! (Yeah – not exactly the taste I was going for.)

The next step is to add 1/3 a cup of rolled oats 

Add about 10 ice cubes and mix until well blended. 

 

This recipe is enough so that you can have immediate gratification and drink a full glass of Chocolate Mint Protein shake and still have enough to pour into a bowl and stick in your freezer for later. I recommend freezing it for about an hour or so. Anything longer than that makes it frozen like an ice cube. So, if you don’t plan on eating your Chocolate Mint Protein Ice Cream until several hours later, you could always stick it in the fridge until you are ready for your treat. Stick it in the freezer until it’s slushy and ENJOY!

 

Oh. My. Gosh. This is a fabulous treat! I would have taken a picture of it so you could see what it looked like, but I had the entire bowl polished off before even thinking about grabbing my camera! (Sorry – but you’ll understand when you taste it!)

This is an excellent idea. One of my husband’s and my favourite healthy treats is to make a vanilla protein shake and add in a banana and some frozen cherries. The cherry-vanilla shake is so good; I bet it would make an awesome ‘ice cream’.

How did you think of adding the oats? I would have never. I’ll try this. I have peppermint extract, but haven’t bought any protein powder since my Body for Life days. Funny, more than learning how to make healthier Ice cream, you’ve inspired me to not eat junk today. (like the halloween candy.)

It sounds really good and I’m going to try it soon! Do you think it would still work with a protein powder that already has the fiber in it? Thanks again for your great ideas! This just might help me make it through the holidays without ruining all of my goals! :)

Jenny – I imagine that it should be fine even with a protein powder that has fiber in it. I’d just give it a try and see.

This is a fantastic idea Liz. I love ice cream so this is going to be a great alternative. It’s a bit boring but lately I’ve just tried to satisfy my sugar cravings with fruit, oranges and strawberries are my favs.
