Breakfast Burrito

I usually strive to get a little bit of lean protein and complex carbohydrates at every meal, but I will admit… there are some days when all I crave is carbs!! My main two weaknesses? Whole wheat toast and granola. I know that might sound funny, but whenever I eat emotionally, those are the comfort foods I reach for. I’m not saying those are UN-HEALTHY choices by any means, but when eaten in abundance - without any protein along side - you’re way off balance and need to get back on track. I can always tell when I’ve been going a little too heavy on the carbs because my mid-section starts to feel a little, um, what’s the word? Fluffy.

 

So last night, when I was eating a bowl of granola at 3:00 in the morning* (yes - I should be ashamed of myself!) I realized that I needed to shape up, straighten out and practice what I preach! So after my morning workout today, I made some fabulous (protein rich) breakfast burritos to start my day with. They have a great balance between lean protein and complex carbohydrates. Plus, they have the added benefit of veggies, so you really can’t go wrong with this meal! 

 

They are yummy, simple to make, and this is how you do it:

 

Mix together:

- 1 chopped tomato

- 1/2 red or green pepper chopped

- 1 can black beans (rinse and drain first)

Spray a skillet with Olive Oil cooking spray and saute the mixture until soft. 


In a separate bowl, whisk the following ingredients together:

- 2 eggs and 3 egg whites

- 1/2 cup low-fat cottage cheese

- salt and pepper to taste


When the veggie mixture is soft, pour the egg mixture into the pan. Cook until the egg mixture is firm. Divide burrito mix onto warm whole wheat tortilla shells and top with salsa. ENJOY!

 

After eating my oh-so-healthy breakfast today, I saw THIS recipe for homemade whole wheat tortillas. They look so easy to make, that next time I plan on making my own tortilla shells! 

 

*In my defense for the late night cereal snacking, I was abruptly woken up by my five year old who had a nightmare. She climbed into bed with my hubby and I, and after being woken up three more times with a foot in my face, a knee jabbed into my side or an arm flung across my face, I finally picked her up and moved her to her own bed. Since I hadn’t eaten since 6:30 the previous night, my stomach was completely empty and growling like crazy - making it impossible for me to fall back to sleep. A bowl of granola did the trick, but I admit that it probably wasn’t the best thing for me to munch on that time of night.

oh yummy! i am HORRIBLE at eating breakfast… usually i call my coffee my breakfast! This sounds awesome. I am gonna make it for the hubby and i tomorrow!

Liz, I know we would be great friends if I lived down south (or Vice versa. I can’t even buy or make granola! It’s too hard for me to limit myself. And TOAST!! give me some real butter with honey and I’ll want the whole loaf. In fact, I DID eat that this morning, and I had to wear a skirt the rest of the day cause I’m feeling “fluffy”. I recommit too! More whole grains in a different form than toast, and more lean protein for me. Thanks for the inspiration, and thanks for the link.

this recipe looks soooooo yummy! this might sound wierd, but, i always feel guilty whipping out a “cooked” meal for myself- i mean, macie is at school, john is at work, and i feel bad spending time on myself, and making something just for ME! i have GOT to get out of that train of thought.
question- serioulsy- what is a “good” snack for 3 am?? i mean- i am doing GOOD if i grab granola! would fruit be a better choice?
p.s. wheat bagels/toast are like a treat to me!! i would live off toast if i could…

When I get the attack of the munches in the evenings if I can’t hang on I’ll whip up a bowl of Quaker oats, hot milk and a table spoonful of homemade peanut butter! yum!

I love your fitness blog. I just found out that I’m insulin resistant and that’s why I’ve gained so much wait in the last little bit. I have PCOS (poly cystic ovarian syndrom) and that is why I can’t get pregnant, but I never knew I was insulin resistant. So I’m gonna use your blog now to get things in check. Thanks for all the helpful tips.
