Veggie-Dilla – My Lunch For The Week
THIS – my friends is a VEGGIE-DILLA! (Or at least, that’s what we call it at my house!) I mentioned it in my previous post about Chipotle Hummus and as I was eating it for lunch today, I thought I just HAD to share it with you! Honestly – it’s divine!
All you do, is spread some hummus on a whole-wheat tortilla shell and top one side with cucumbers, sprouts, tomatoes, avocado and even a slice of turkey and provolone cheese if you’d like. Then you fold it in half, wipe the drool that is falling from your mouth and then dig it! Mmmm. Mmmmm. Mmmmm.
I’ve been eating one of these for lunch every day this week and I’m still not sick of them! And hello? Look at all of those veggies you are getting in one meal! Awesome!

mmm… this looks yummy! i think i will try it tomarow!
p.s. you should try “cracker bread” or it is also called “lavash” you can get the wheat kind, and you soak it, then let it dry inbetween a towel and use it like bread/pita, etc.. it is super yummy, super good for you- i like using it for “valley rolls” (recipe is on back of package)
