Tomato Jungle

Every spring, we plant tomato plants in our small little vegetable garden out back. This year was no exception… however, there was one big difference in our tomato plants this year compared to other years. Our tomato plants turned into a tomato jungle! These out-of-control plants are taller (and wider) than I am! Here is proof!

 

 

Since we are drowning in tomatoes, we eat them as often as we possibly can. My snack of choice this week has been a bowl of low-fat cottage cheese, topped with a tomato and a bit of salt and pepper. I love eating this healthy snack… and lately, I’ve been eating it EVERY DAY. Low-fat cottage cheese is a wonderful source of protein and when you add a vegetable to it… (yes, I think tomatoes are veggies – even though many would say they are a fruit) you get an even HEALTHIER snack!

 

Just wanted to share that quick little snack idea with you since tomatoes are so FRESH on my mind! (And ALL over my kitchen counter!) What are some favorite ways you eat your tomatoes? I’d love to hear!

mmmmm i love tomatoes! never then on cottage cheese though! I know that this is sooooo not healthy, but I LOVE Fried Green Tomatoes!!!! Oh so yummy!!!! I will have to try the cottage cheese one today!

lol- those are stinking huge! hopefully your little tomato worms are still a “normal size”!
We have these plants every year as well!
I like eating tomatoes with equal part red onion chopped up and top off with some ranch- voila!

Andrew – Am I going to have to send you a care package or something? LOL! I can’t believe you don’t have cottage cheese OR raspberries where you live! That’s just sad!
Autumn – Can you believe I have never tasted Fried Green Tomatoes? In fact, I’ll be honest, I didn’t think people really did… I just thought it was a name of a movie! LOL!
Annie – thank goodness our worms aren’t giant sized like our plants are! If they were, you wouldn’t catch me standing next to the bush!

I have followed you from the scrapbook days also–love the new fitness site as well.

I LOVE tomatoes too!! My favorite thing is to dice them with diced fresh cucumbers, diced ripe avocado and a bit of itlaian dressing–a very YUMMY salad!

Also roasted tomato soup is divine with fresh garden tomatoes!! There are some great recipes at allrecipes.com for that one! OOOOOHH! This is making me hungry!

I love tomatoes too! Here’s another recipe you might like. In a pot I throw in chopped up tomatoes with chopped up zuchinni. Than I just heat it up until it gets a bit mushy and add in fresh basil, fresh chives, and a bit of cayenne pepper. That’s it! My friend, who introduced me to this liked to mash it all up so it has a bit of a “baby food” consistency. Personally, I liked it a bit more solid. It’s great as a side or even as a quick snack.
