Ricotta Raspberry Delight
Achieving a healthy weight and having a figure you feel comfortable in, does not require misery. Many times, people think that in order to lose weight, they have to live on bland foods with no taste and no enjoyment. Well, that’s just NOT true. The key to losing weight or maintaining a healthy weight is to choose foods wisely and to have moderation in all things. Of course we all need a sweet treat every now and then – and the good news is, there are many healthy recipes available to give us that “mmmmmm” taste we are craving.
Last night, I was in one of those moods when I just needed something sweet. I made one of my favorite treats and wanted to share it with you. It’s sweet, it’s packed with protein, it’s low in calories and it even has a serving of fruit included! I came up with this little concoction a while ago, when I wanted something healthy and used what I had on hand. I call it:
Ricotta Raspberry Delight

Mix together:
1/4 cup part skim ricotta cheese
1/4 cup low fat vanilla yogurt
Top with:
1/4 cup frozen raspberries
l0 almonds (slivered or whole)
1 tablespoon ground flaxseed
The greatest part of this little dish is how much protein is included! Ricotta cheese, yogurt and almonds all contain a decent amount of protein, so you can feel good when you eat this because you know you are not getting a dish full of FLUFF – like so many deserts are.

ohhhh i MUST say- my favorite part of the whole “watching my diet” thing… is the NEW foods i have started introducing- you would be proud- i whipped out my blender and make a strawberry smoothy with what i had in the fridge!.. =) and these recipe’s of yours are always soooo creative- not the “plano- plane-o” stuff- THANK YOU!!!!! I remeber the spinach one… mmmmm
