Drink Your Vegetables

Posted on July 14th, 2008.

One of my favorite ways to get plenty of veggies in my diet is to DRINK my vegetables! (Before you gag…keep reading.) There are so many variations on tasty spinach shakes and although they turn out to be a weird green color - they taste OH SO GOOD!

Here are two of my favorite recipes:

Strawberry & Banana Spinach Shake

1 cup vanilla rice milk

Large handful of spinach (stems and all)

5 strawberries (fresh or frozen)

1/2 banana

5 ice cubes

Blend well in a blender and enjoy!

Carrot & Cucumber Spinach Shake

1 cup vanilla rice milk

Large handful of spinach (stems and all)

1/2 carrot (peel and slice)

1/4 sliced cucumber

5 ice cubes

Blend well and enjoy!

Just a note about spinach and cucumbers - You can add these two veggies to almost any shake and it doesn’t alter the taste in a negative way. I have even added these to my chocolate protein shakes and have still enjoyed them!

The best part about these shakes is just how nutritious they are! Spinach is packed with vitamins and minerals and can protect against all sorts of ailments. Just think about how you would feel if you started every day with a spinach shake. By 8:00 am, you would’ve already had 2 or 3 servings of vegetables! How cool is that?

I have wanted to try one of these green smoothies, but I don’t have an awesome blender…does spinach get chopped up in a regular blender?

My blender is just a plain old, middle of the line blender, bought at Walmart. I think it was only around $30 and it chops my carrots and spinach beautifully! I usually put my liquid in along with one of the ingredients and then blend. Add another ingredient and blend again. I blend each time I put something new in and I always do my ice last. The drink is not what I would call as smooth as an ice cream type shake, but it isn’t chunky…at least with my blender it isn’t. :)

I have been making the spinach and strawberry
banana shake since seeing it on your first
blog. They are absolutely delicious! Even my
kids love them.

Hi Liz,
I do really like the strawberry, spinach, banana shake (even though my family calls it “bog water”. I have lost 5 lbs. so far with several more to go. The cucumber, carrot shake I got mostly down, just could’nt stomach the rest. Is there a huge benefit to drinking the rice milk? I used it, just wondering if skim milk would be just as close?? Thank you for the helps!

Janice - Congrats on losing 5 pounds! It’s cool how even 5 pounds can make a difference between one size and a smaller size. That’s awesome! You know, there really is no benefit to using the Rice Milk - other than the Vanilla flavor. I LOVE the subtle flavor the rice milk has and when I have tried it with regular skim milk, the taste bothers me. A great way to solve this dilemma is to use skim milk, with a scoop of vanilla protein powder. I have tried all three of these methods and having that vanilla flavor - whether it’s from the rice milk or the protein powder makes it a bit more enjoyable to me. Experiment with it though and find something that tastes good to you. If you don’t enjoy eating (or drinking) something, it won’t become part of your regular diet. I’m glad you tried them! :)
